For so many years I had friends and family telling me I should sell my gluten free cookie at local stores because it was a fan favourite amongst my circle of people...
I finally took the leap in 2020 and baked my product at home to take it to local store owners and ask their opinions. Doing this was scary and intimidating, but when I did, I was encouraged! Store owners loved it and they wanted to know when they could get it, the pricing, how it would be packaged, etc.
I started off with getting very small orders and the cookies weren’t flying off of shelves like I had hoped. Little to my knowledge, the packaging started to look terrible after a couple days on the shelf! The cookies were full of peanut butter and the grease was staining the packaging! A store owner told me that she had to pull the cookies off the shelf and this was the beginning of a very stressful experience! It was at this moment that I realized, this isn’t going to be an easy journey… If I had only known about shelf life testing in advance, I could have avoided this embarrassing and costly mistake!
This is just one example of how having the right knowledge could have saved me tons of time and money, but there are so many more.
